Is there a way to hide the author on portfolio posts?

Honestly, I'd love to pull all the info under the title to be able to put a subtitle there.

Perhaps I just need to hide the subheader, and create my own "header"?

Ok, thanks. So to remove author from intro header type, you need to use the following custom css:

#Intro .intro-meta > div.author { display: none !important; }

However, it is not possible to move those details with custom css. This requires files customization.
