Is there any way to have "related posts" and categories show in a right hand panel as opposed to under the post?

You can simply add a widget to the sidebar of your blog in appareance>widgets
Like so:

If you do not want related posts below you post go to them options>blog,portfolio&shop>blog and turn it off.
