How to order portfolio items - Multiple categories not working

Hello,

I am trying to order portfolio items the way I want them displayed. Unfortunately the only method I have found working is by changing the published date. Is there an other way of ordering items?
Also, when I try to "force" a portfolio item to display ONLY portfolio-items from specified categories (by using category slugs - https://pasteboard.co/IyoyRFY.jpg) this is not possible. Instead I get All portfolio-items from All categories.
