You have two shop templates. In one, you used the Heading element where you put the title by hand, and in the second one, you use the shop title element. I was sure that the brands' pages take their layout from the first one, but they took it from the second where the title is not dynamic.
If you replace the heading element in the second template with the shop title element, then the brand title will show up.
