It all depends on how would you like your website to look and work. The higher resolution your images have, the better they look but they also weigh more.
If you want to have good website performance you need to check the smallest resolution in which your products look good, but I recommend to not having images smaller than 600x600px because this size is the smallest one that can be used in the product list thumbnails.
Below that resolution, the products list might not align correctly.
