Modifying "no products found" behaviour
I have a custom menu - that may at times show categories where the products are temporarily out of stock.
I would like to edit the default message "No products were found matching your selection." which is the default info message to rather have a short message like: "Our sincere apologies - all the products in this category are currently sold out. Feel free to drop us an email and we'll let you know as soon as the products are back in stock". and then potentially a back button - or inline back to previous link

further to the above - I do use custom templates for each category product listing page - so could edit those - but not sure how to add the above functionality

What you ask for requires file customization, which, in reference to Item Support Policy, is not allowed. http://themeforest.net/page/item_support_policy
So if you want to modify files and don't know how, you should contact your web developer. Item Policy says:
