But as soon as I install the pluins again, I get this error message

Well, the message indiciates that the problem lies in the wp-admin folder so it is not rather a theme issue BUT you should reinstall wordpress and the theme. Make sure to have the newest version. Before you do that, try updating the php version to 7.0 thanks
