  1) To change the "Excerpt" field, you have to edit your post, there you will find this field(on the right sidebar or on the bottom of the page)

  If text is provided there, then the "Excerpt Length" will not work, because this option is created for limitation on basic wordpress editor's excerpt field.

  
  

  2) If the "Read More" button is for single post, then it can be hidden with the CSS only.

  But, if for blog page, then you can find it in the Theme Options > Blog, Portfolio & Shop > Blog
