I'm trying to create a table row with a transparent background and no border lines or cell lines

Please use this CSS code, in the Theme Options > Custom CSS & JS > CSS

table th{background:transparent !important; border:none !important; box-shadow:unset !important;}

It works but the spacing is wrong.

How do I close it up so that the big spaces between the words disappear?

This is a table, so the space will always be there, you can try to create some CSS code for changing that, but I think it will be really hard to achieve.

In this case, I strongly suggest to use the Muffin Builder column item, create three items with 1/3 size and insert the text inside them.

Thanks - I couldn't get that to work either so I reverted to text only :-)
