On a mobile device, it seems to be opening the image TWICE. What is causing this? It's quite annoying.

Hi,
You are using an Elementor, which has its own lightbox for images, and it shows twice because we also have a feature for that.
You can either disable Elementor lightbox:
https://elementor.com/help/lightbox/
Or ours in Betheme -> Theme options -> Addons & Plugins -> Addons:

Fantastic, thank you so much! Been using BeThemes for last 5 sites, had no idea this was an option. I love yours more than Elementor's Gallery.
