We have a general video about the Poup Builder:

It does not show how to add an e-mail field, but all you have to do is create a contact form with the Contact Form 7 plugin and drag and drop the CF7 element to your popup.

Does this automatically mean that the 'submit'-button is also coming from contact form7?

Yes, the submit button comes from the Contact Form 7, but you must remember to add it in your form.
