How to use featured image AND custom image for header?

Hello!

I would like my pages to have a featured image so that this image appears in the masonry grid. 

However, I do NOT want the featured image to be used for the header background. How can I make it so that all the pages have a different image for the header background, and NOT the featured image?

Right now, the featured image is overriding the image I set under Theme Options, and I don't want that to happen.

ALSO, my second question is that I simply do not have a link to Portfolio on the left menu of my WP dashboard. I cannot set up a portfolio or add portfolio items. How do I make the link show up?
