  You can use the categories as menu items in appaerance>menu, see screen:

  The titles should be in the subheader, please check in theme options>header&subheader>subheader if the title is not disabled?

  You have probably disabled the header navigation for posts in theme options>blog>general

  yes, but the "hide header arrows" flag is used to display the arrows that lead me to the previous or next post. Instead I need a button that brings me back to the list of posts by category.

  Yes, but when you enable it, then there will be an icon in the middle that redirects you to the blog page.

  please go to settings>reading and make sure that you have set the default blog site as the posts page.

  these articles have the category "news", while there are others2 without category.
  if I go into the details of an article and go back with the "show all" button I see all the articles, including those without a category (on the second page)
  however your theme is fantastic, you have done a really good job!

  Yes, this is normal. This button takes you to your default blog page which has all of them. There is nothing that can be done.
