Hi,

with portfolio grid it is not possible at this moment. Maximum is 4 items per row.

Can I modify the portfolio function in the child theme to overwrite this?

If you have good website developer then you can do everything. It depends only on developer's knowledge but to be honest this is quite complicated to do this.
