Remove the "All" filter

I want to remove the "All" filter in portfolio shortcode, Im using multiple category setting.

Can I also change the current category ?

I've seen that it's not possible to hide all item. Thats also true on js ?

Hi,
we can remove the button with custom css, but still ALL items will be loaded at start.
