I will wish to mask the long description of my products by default. If the user wants to read more, he presses the + button as it is already the case for the opinions

To hide description of product you have to use Custom CSS.

Sorry, but this is not possible.

This require an additional JS edit which we do not support.

All I can suggest you, is change the style of it in

Theme Options > Blog, Portfolio & Shop > Shop > Single Product > Style.
