sub header / breadcrumbs are expanding to 1920x880 on mobile so the featured images that I have are not showing up centered. Looking for help on this. How can I fix it?

I need to know what size to make the images for the featured images so that on mobile ipad, phone's etc... will shrink / fit. on desktop they are perfect but they are 1920x880 for w/e reason.

To make it fit, you have to insert that image in the 'Image" item in the Muffin Builder as a first section with the "Full-Width" option enabled in section settings. http://prntscr.com/mq9z6r
Which option are you missing? As I can see, your theme is not up to date, so please update it to the latest version.
I told you, it's not possible to make it fit with the "featured image" because it will display your image in the "background-image" rule of CSS and it will not shrink your image - so this text will not be displayed on all of the screens, because it's too wide.

Inserting it in the "Image" item will insert your image in the <img> tag and behavior of this item is very different - it will shrink the height of this image to make this image as wide as possible.
Take a look at the difference at the 450px of width:
I suggest to use the images with the '768px' width or a full HD resolution - for the feature image it should be a good quality. Also, this size can be customized to the lower(or higher) quality in the Theme Options > Blog,Portfolio&Shop > Featured Image. Remember to use Thumbnail Force Regeneration after changing the resolution there
