I am trying to edit the entries in the Pre-built features list and I can't figure out how to list/browse the library of existing icons to select one under the icon field on the editor.

You can find the list of available icons under the following link: https://muffingroup.com/betheme/elements/icons/.
Or you can add other elements as Icon Box, where you can also find them there.
