My site at http://www.britishshorthairkittens.com/faqs shows a "1" before the answer. Where can I go to change the "1" to something else?

you can't change this to something else. You can only remove this part if you want.

You can remove this element with below css:

.faq .question::after { display: none !important; }
.faq .question .title .num { display: none !important; }
.faq .question::before { border: 0 !important; }
.faq .question .title { padding: 20px 40px 20px 20px !important; }

This can be done in theme files only but if you don't know how, then you must contact with your site developer. And remember that all changes in files you do at your own risk.

@aromansde As we wrote above, you can do this in theme files. For shortcodes is responsible functions/theme-shortcodes.php file.
