Is there a way to customize the 'Simple' header layout so that 'Burger' symbol is on the Left and logo central but also add the shopping cart to the right?

Thanks for that that work but I can't find how to now use my custom header on all my pages without adding in manually?

When you save the header template, you have a popup with Display Conditions, and there you can decide where you want to show your header template.
