  I’m trying to customize the existing single product template that came with the theme, but I couldn’t find it listed among my templates.

  Is the default single product page that comes with the theme customizable, or do I need to create a new one from scratch, as shown in the video tutorial?

  No, product layouts from theme options are not customizable, so you must create it from scratch.
