There I only see the options: “Every time”, “Only one time”, and “Once every few days.”

You must change the display trigger to "On start with delay", and set the delay there:

1 more question about it: The time is displayed as ‘07 days’. How can I remove the leading zero so it shows ‘7 days’ instead?

There is no option for that, unfortunately.
