Im having trouble using some of the widgets and the blog posts. I have been using the categories, tags, and archives widgets and when I navigate to one of the selections it is showing text from the most recent blog post related to that tag, category etc. How do I hide the text and just list the blog posts?

it's because you created the Blog page wrong way. We suggest to look at http://themes.muffingroup.com/betheme/documentation/#blog where we explained how to properly create Blog page.

Sorry I understand that set up, when I navigate to the categories page it is showing the text from the most recent blog post in that category at the top and listing the other blog posts relevant to that category below the text. How do I remove the content from the top of the page?

No, you still do not understand. All you need to do is create a blank page, which you may call BLOG for example but this page should be completely empty (no content). Then, under Settings > Reading, you must set this BLOG pages as posts page. After that, posts will load automatically. That's how it has been described in the doc above so we do not understand what is not clear enough here.
