I was trying to figure out how to work the Portfolio Grid categories. I just need to know how to create a category, and how to put specific images inside the portfolio. I tried creating portfolio categories under the portfolio tab on the left menu but nothing I do seems to be working.

What exactly you did then and what doesn't work? Would be great if you can give is more details about what does not work as should.

I looked through the media pictures and tried to find the categories and how each photo was put into a certain category. My ultimate goal is to select pictures, insert them into my own category and be able to simply implement them into the grid. Is there some sort of tutorial I can be linked to for portfolio grids? I'm sure its a very simple process, I just cannot find a way to utilize the portfolio grid.

All details about portfolio you can read in the doc on http://themes.muffingroup.com/betheme/documentation/#portfolio - not sure if that's what you mean but hope this would help as this is the only Portfolio that has been included into theme and except that we do not have anything else.
