Theme options>colors>header for the subheader title color

For the breadcrumbs use custom css

#Subheader ul.breadcrumbs li {color:red !important;}

Change the red color to any you want.

Can I change color at each post for header, I mean change because some times header image is lighter o darker and cannot read always.

You cannot change them individually unfortunatelly.
