you can change main menu items under Theme options > Colors > Menu & Action Bar section but please remember that custom colors works only with custom skin.

I'm using a transparent header, and I want to change the colour of the menu text so that it can be seen with the background image.

We do not see if you activated one, very important option. If you look at https://snag.gy/kO8ZBr.jpg there is PAGES menu item. You should open it's settings and check Activate
