How do I change the color of the text? If I use Custom CSS, what Field do I insert it in?

to change it's color, you need to use the following css:
.chart_box p big { color: #FFF !important; }Like any other css, you should paste it under Theme options > Custom CSS & JS > Custom CSS section.
