Right now it is just three little lines that no one understands, notices or sees.

this is how responsive menu looks like and this is the most well known and popular icon for responsive menus so we can not agree with you that "no one understands, notices or sees" it. However, you can replace this icon with the text under Theme options > Responsive section if you want.
