if your theme settings get back to default, someone must click "Reset to Defaults" button located under Theme options > Backup & Reset section. Except this one, we do not have any other option to reset options or remove the content.
If we may suggest something, you should contact with your admin or hosting provider so they can check in logs what happened exactly.
