I am having trouble with a few of my BeTheme sites, and it may be due to a recent PHP upgrade. I can't find documentation on this anywhere...
Which php versions is BeTheme compatible with?

Betheme is always compatible with wordpress,
https://wordpress.org/about/requirements/
So you just have to be compatible with wordpress.
There have been a couple of issues with VC on PHP 7.2 so better use 7.0
