The subheader image on single portfolio item is always this same as the main page of portfolio.
There is no way to insert other image in subheader.

So, if you want to change subheader image on the main page of the portfolio, then please edit this page and scroll down, you'll find the 'Subheader Image' field, upload image there and all single portfolio items will have this image too.
