Google font style and weight

The font is Open Sans and I checked 700 Bold, and it is applying that weight and style site-wide, but I only want to apply it to h fonts.

How can I either:

A. Set Google weight/font by font type

B. Set only the p font to normal weight, while everything else is Open Sans 700 Bold?

Could I set different google font weights to different h fonts via CSS? If so, how, because I tried and couldn't get it too work as I thought it would?
