Hello, 

How do I change the content of the onsale span? 

I would love for it to show the default woocommerce value like "Sale!", instead of just a star icon.

Hello,

This is basic woocommerce feature, it's not possible to change through the theme options.

You would have to edit the woocommerce files and change that in the plugin's files.

Unfortunately, we do not provide such kind of support.
