How can I switch from Muffin Builder to WP BakerY?

I don't see any option settings on my sidebar Appearenace - Themes - to manage my theme options (ad font - colors - etc). Why?

I want also switch from Muffin Builder to WP Bakery for editing pages: how can I do?

Just enable the WPBakery plugin and you will be able to edit the page with WPBakery, see screenshot:
