1) To remove the categories, please, go to Betheme -> Theme options -> Blog, Portfolio & Shop -> Portfolio, and uncheck the Categories from Portfolio Meta.
2) Please replace the previous Code with the following one because it is easier to remove the first date than removing only "on".

So how to get rid of the unwanted "CATEGORIES" link and the word "on" before the date?
(in a later stadium we want to translate and you will see that the most simple things cannot be translated, so deleting them is the most simple way)
Get rid of one of the dates succeeded with your help. But is was better that there was any possibilaty to simply edit the single portfolio page.
(we use Elementor and your theme, there must be somewhere a possibilaty we thought in 2021)
