I cannot find the location to edit the display dimensions of embedded videos.

They get cut off and when I try to delete the css class, it automatically puts it back when I refresh the page.

Not! It's not working, I can't change dimensions. I delete the css classes but it comes back when saved. The video you can see, it's cropped, it's not in 16:9 as it's configured in css

Please, try the following CSS code:

figure.wp-block-embed-youtube iframe{
   height: 520px!important;
   width: 920px!important;
}

However, you can build your posts with the Muffin Builder where you have more control over items, and in that case over video item.

If you want the content to be readable with the SEO plugin, you need to use the Builder -> SEO option.
