Please, turn off all of the plugins except basic WooCommerce, refresh your cache, and check if the problem persists.

Moreover, if you are using a child theme, switch to parent, and recheck it.

I have noticed that there is an error 500 in the console when publishing/updating the template.

"500" errors are server-related, and in that case, you should contact your hosting provider and ask to look at your server logs and resolve the source of this problem.

I can see that you are using a Shop item, which is not adapted to the filters.

Instead, please, use the Shop products instead, and all should be fine.
