Can I change or rename the categories in header of pre-build websites?

I want to edit the header, but I do want to use the header which is insalled automatically with the pre build website which I chose. I can edit a header an use new categories if I create a new header. But where can I change the names of the categories in the header that alredy exists by installing a pre-build website?
