What is the best way to add category blocks on a one page? Do I still need a Shop page? can the category blocks link to indiviual products? I am using a one-page template and dont want to create a shop page (on its own) but rather 4 category blocks that have category pages?

You can use the Shop categories element available in the BeBuilder.
