Just asking for advice;
We are busy with good SEO, and therefore want to adjust pages and also product categories and sub-product categories.
Now the main product category must have a layout such as first an H1 title, then some products and then some text with h2 and h3 parts. And this must also be visible on the subcategory. Do I also have to do this using templates and work with include and exclude?

The titles are simply too large and long to display them in 3 columns on such small mobile screens. What you can do is break word on smaller screens.
