we are building out an e-com store and would like a menu that simply lists all categories and sub categories like a regular WordPress sidebar widget.

We have another client site set up with what we are looking for. In the screen cap below we see on our BE Theme shop page the slider for price, and under that we would like the automatic category listing to show up.
The second screen capture shows the shop page at https://chinookarms.com/shop/ where we can see WooCommerce categories listed as they appear in the categories listing on the back end.
You must use the Product Categories widget in the WooCommerce | Plugin widget area.
