Just like '{featured_image} pulls in the post featured image in the bebuilder, I'd like to pull in the post title. Is there documentation where all shortcodes are?

are you working on a post loop or where exactly you want to put that title? Whenever you are working on a post loop, next to fields you have DYNAMIC ICON which looks like on the screenshot below and after clicking on it, you have all dynamic data available for that specific post loop. After clicking on that icon, the popup with available dynamic data will show.
