Is it possible to set a simple sidebar for the shop page and didn't show them (or remove) at single product view (to have the full width)?

Yes, it is possible. To remove sidebar from single product pages, please use below css:

.single-product .sidebar.columns { display: none !important; }
.single-product .sections_group { width: 98% !important; }
