As soon as I see that a plugin is the root cause, I can activate them all back. This way, all the functionalities are available as soon as I finish testing. Otherwise, if I wanted to disable plugins one by one, it would take longer, especially on slower servers or with more plugins installed. When you do it, you can prepare and inform website visitors that you plan to do maintenance work, activate the under construction page, etc. Moreover, you also know best which plugins you need most, and from which you can start disabling.
