I would like the subheader colours to be different on each webpage but don't know what custom CSS to use to opverride the theme template.

Yes I would like to change the subheader background colour on individual pages:

So on this page, I would like to change the the subheader background colour from #335FAB to #7054A3:

I'm guessing that I can change the custom CSS in appearance on the dashboard but don't know how the code should read.

Yes, this can be done with custom css exactly. To do this, you must play with below css:

#Subheader .page-id-xxx { background: #000 !important; }

where xxx is page ID.
