Where can I change the standard-value for the lineheight of listings?

I searched in the globals under fonts and size & style.

There is a default margin assinged to list points which you can adjust with the following CSS code:

.column_column ul li p{
 margin-bottom: 5px!important;
}

Put it in Betheme -> Theme options -> Custom CSS & JS -> CSS.

Anyway, I suggest using the List element instead, where you can adjust it in the Style tab:
