I am using the testimonial section over a dark background, is it possible to change the text colour using the 'Custom | Classes' section so that it only changes the text on this page rather than changing the default site colour?

Yes, it is possible of course you know know how to use css classes. Please set the class for section and then under Theme options > Custom CSS & JS > Custom CSS section, write your own css to change colors.
