How to add/change a tracking code snippet in the header?

Hello All,

I'd like to add/change a tracking code snippet on different websites. It should be added behind the <head>-Tag on each website.

How could I have access to the header of ech website please to make changes?

Sorry, but I'm still not so familiar with this CSS stuff. :-)
