1) There is a limitation to displaying twenty categories in a dynamic data list. Without such limitations, there was a problem with BeBuilder hanging for people with many categories.
Notice that dynamic data does not have to be displayed there to use it.
Use the following construction:
{title:ID:term}
In ID, put the category ID you want to display there.
2) Option on your last screenshot does not refer to the dropdown list in the builder. It refers to what will be displayed on the frontend. If you set this option to Hide, categories that do not have products will not be displayed on the frontend.

I can see that your categories do not have any products assigned to them.
Please, check if they appear when you assign any product to them.
