There must be some kind of other limitation on server side as we checked it on 3 different hosting services and all works fine. We are able to put and save emojis.

You probably set FIXED position for header. FIXED means that anything below, goes behind the element that is FIXED. In such case, you have to switch from FIXED to other style.
